A recipe for 4 that you need for 6 gives you 6 divided by 4, which is 1.5, so every amount gets multiplied by 1.5. The part that trips people up isn’t the arithmetic. It’s the short list of things that don’t move with that number: seasoning, leavening, pan size and cooking time.

The scaling factor does most of the work

Every scaling job comes down to one number. Divide the yield you want by the yield the recipe gives you, and that ratio is your scaling factor. A recipe for 4 that you need for 10 has a factor of 10 divided by 4, which is 2.5. Multiply each ingredient amount by 2.5 and you have your new quantities. Halving works the same way with a factor of 0.5, and any awkward number in between works too. Scaling 4 servings to 7 is a factor of 1.75.

Doing this on paper beats eyeballing it because the errors compound. Guess a little high on flour, a little low on liquid and a little high on salt, and those small misses stack into a noticeably worse result. One clean multiplication keeps the proportions that made the recipe work.

The ingredients that don’t scale cleanly

A few ingredients break the multiply-everything rule. They’re the difference between a scaled recipe that tastes right and one that’s off.

Salt and strong spices. Seasoning doesn’t scale linearly with volume. Doubling the salt in a doubled recipe often overshoots, because saltiness climbs faster than the raw numbers suggest. Scale salt and bold spices to about three-quarters of what the factor gives you, taste, and add more from there. You can always add salt. You can’t take it out.

Leavening. Baking soda and baking powder are the riskiest things to scale. Too much and a cake rises fast, then sinks, sometimes with a bitter or metallic edge. On a big scale-up, hold back a little from the multiplied amount rather than using it all. This is the ingredient most likely to wreck a doubled bake.

Eggs. Eggs come in whole units, so a factor of 1.5 asking for three-and-a-half eggs is a real problem. Beat one extra egg, then add roughly half of it by eye or by weight. A large egg is about 50 grams without the shell. For small adjustments, rounding to the nearest whole egg is usually fine.

Aromatics and alcohol. Garlic, chilli, and anything you cook off like wine or spirits also scale by less than their volume. A scaled-up sauce rarely needs the full multiplied amount of garlic to taste right.

Pan size and cooking time don’t follow the factor

This is the catch most posts skip. Scaling the ingredients is only half the job for anything baked or roasted. A double batch in the same pan cooks differently, so you often need a bigger or deeper dish and a different time. Neither of those moves with your scaling factor.

Match the pan to the batter depth you started with. If a recipe filled a 9-inch round to a certain level, a doubled batch wants roughly twice the pan area, or two pans, so the depth stays similar. Pour a doubled cake into the same tin and you get a raw centre and a burnt rim. To compare round tins, look at their areas, not their diameters: a 9-inch round is about 64 square inches and an 8-inch round about 50, so those two are further apart than the inch of diameter makes them look.

Cooking time follows the pan, not the ingredient list. A larger, deeper bake usually needs more time and sometimes a slightly lower oven, so the outside doesn’t run ahead of the centre. A halved batch cooks faster. Trust doneness cues over the clock: colour, a clean skewer, an internal temperature, the set of the edges.

Baking is less forgiving than stovetop cooking

There’s a real split here worth knowing before you start. A stew, a sauce, a soup or a stir-fry scales well because you taste and adjust the whole time. If a doubled chilli is a bit flat, you add more spice at the end and nobody knows. Baking doesn’t give you that. A cake or bread is a set of ratios between flour, fat, liquid and leavening, and once it’s in the oven you can’t fix the balance. That’s why the seasoning, leavening and pan notes above matter far more for a bake than for anything on the stovetop. When you’re scaling something baked, go slow and respect the chemistry. Halving without the guesswork

The egg problem shows up here too, so for a halved recipe that calls for one egg, beat it and use half by weight.
