Frequently asked questions

What temperatures are on the chart?
The full range from 250°F to 475°F in the usual 25°F steps, each with its Celsius, fan-oven and gas mark equivalent and a note on what it suits. 350°F, 177°C, gas mark 4 is the moderate oven most baking uses, and it is called out separately as the one to remember.
How do I set a fan oven from this chart?
Use the fan column, which is about 20°C below the conventional Celsius. A recipe that says 180°C conventional becomes roughly 160°C in a fan oven, and you check the food a little early because moving air cooks faster.
Do I need the chart if I have the converter?
They do different jobs. The oven temperature converter is for typing a single value in and reading the rest. This printable puts every common temperature on one sheet so you can glance at it mid-recipe with floury hands, no screen needed.
How accurate are the gas marks?
Gas marks are approximate steps of about 14°C, so the chart rounds to the nearest one, which is all a gas dial can set anyway. Ovens also drift from their dial, so for anything fussy an oven thermometer is worth having.
